Main Course   -   Amish Meatloaf   by Rusty Nejdl

Description I don't know if this is Amish but with strips of Bacon and a yummy ketchup glaze, my whole family likes this recipe.
  • For the meatloaf:
  • 1 lbs ground beef
  • 1 cup crushed butter flavored crackers
  • 1/2 chopped small onion
  • 1 egg
  • 1/4 cup of ketchup
  • 2 tbs brown sugar
  • 2 slices of bacon

  • For the topping:
  • 1/2 cup ketchup
  • 1 tbs white vinegar
  • 1/4 tsp salt
  • 1 tbs prepared yellow mustard
  • 1/4 cup brown sugar
Directions 1. Preheat the ovent to 350 F

2. In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, ketchup, and brown sugar until well blended. Press into 9x5 inch loaf pan. Lay bacon slices across the top.

3. Bake for 1 hour.

4. Mix together remaining ketchup, vinegar, salt, mustard, and brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.
Serves 6
Time to Make 1 hour 30 minutes
