Snacks and Appetizers   -   Apple Samosas   by Matt Musselman

Description A traditional Indian snack/street food with an Iron-Chef-inspired twist.
Ingredients
  • DOUGH:
  • 3c flour
  • 1/2 tsp salt
  • 4Tb melted butter or ghee
  • 1/2c plain yogurt
  • 1/4c water

  • FILLING:
  • 3Tb butter or ghee
  • 1 onion
  • 1 apple (diced)
  • 1 clove garlic (minced)
  • 2tsp cumin
  • 1tsp tumeric
  • 1/2tsp coriander
  • 1 1/2tsp salt
  • 1/8tsp black pepper
  • 1/4tsp dried red pepper
  • 1lb potatoes (diced)
  • 1/2c fresh peas (shelled)
  • 4Tb plain yogurt
  • oil

  • CHUTNEY:
  • 2Tb melted butter or ghee
  • 1 1/2tsp cumin seeds (sauteed)
  • 2 fresh chilis
  • 1Tb grated ginger
  • 1tsp tumeric
  • 2 apples (diced)
  • 1Tb tamarind concentrate
  • 1/2c vinegar
  • 1 1/4tsp cinnamon
  • 3/4tsp nutmeg
  • 1/2c honey
Directions Mix ingredients for dough, knead until somewhat firm, roll into 8" squares, and refrigerate or set aside.

In a small saucepan, saute the cumin seed in the butter until slightly browned. Add apples and onions, and saute until soft. Reduce heat, and add other ingredients, letting chutney cook down slowly until syrupy.

In a large saute pan, begin the samosa filling by sauteing onions, apples, garlic, and potatoes in some oil until soft. Reduce heat and add other ingredients, cooking until well blended.

Spoon filling into the middle of each square of dough, and fold into a pyramid shape (if possible -- this is the hard part), using water to help seal the dough edges if necessary. Deep fry in oil until golden brown.

Serve with chutney for dipping or drizzled on top of the samosas.
