Mix ingredients for dough, knead until somewhat firm, roll into 8" squares, and refrigerate or set aside.
In a small saucepan, saute the cumin seed in the butter until slightly browned. Add apples and onions, and saute until soft. Reduce heat, and add other ingredients, letting chutney cook down slowly until syrupy.
In a large saute pan, begin the samosa filling by sauteing onions, apples, garlic, and potatoes in some oil until soft. Reduce heat and add other ingredients, cooking until well blended.
Spoon filling into the middle of each square of dough, and fold into a pyramid shape (if possible -- this is the hard part), using water to help seal the dough edges if necessary. Deep fry in oil until golden brown.
Serve with chutney for dipping or drizzled on top of the samosas. |
