Snacks and Appetizers   -   Potato Ham Tarts   by Rusty & Sarah

Description This treat can be served as a snack, party favor, or meal with the right accompaniments. You can substitute ham for other meats to your liking, such as chicken or beef. The majority of the cooking come in waiting for the onions and potatoes to soften and brown, so I recommend you start with that then get the pie crusts browned in the oven.

Ingredients
  • 16 Small pastry tart crusts
  • 4 New Potatoes (small cubes)
  • 1 Medium yellow onion
  • 8 oz. sliced/diced ham
  • 4 oz. Goat cheese, crumbled
  • 2 tbsp. butter
  • 1/8 cup heavy cream
  • Sprig of rosemary
  • Clove of garlic
  • 1 tsp. thyme
  • 1 tsp. celery powder
  • 1 tsp. paprika
  • Salt & pepper to taste

Directions Bake the empty pie crusts until they are fluffy and lightly browned, 350 degrees approx. 15 min. When done, set aside.

Meanwhile, toss the potatoes and onions in a skillet over medium heat until lightly brown. Add garlic, rosemary and ham once the onions and potatoes are soft. Stir for a few minutes, then add the heavy cream and stir in the seasoning. When the filling has a firm consistency, remove fom heat and fill the tart cups. Bake the cups with filling for approx. 20 min. at 350 degrees, or until cup edges and filing are brown. Remove from heat and add goat cheese on top. Makes approx. 16 cups.
