Sauces, Marinades, and Rubs   -   Ernie's Shiner Barbecue Sauce   by Lee Gibson

Description Me sainted father, Ernie, has been using a similar recipe for years. Lately, I began to think that something ineffable was missing...so what do I do? Throw in some beer! Shiner Bock has become my favourite cooking beer. Ain't no sort of sauce or soup or stew that can't benefit from a splash of it. Cooking with wine is for pansies.

(OK, fine...I cook with wine too. And my dad's not dead, so he can't REALLY be sainted. But you get the picture.)
  • 1 1/2 cups catsup
  • 4 tbl vinegar
  • 4 tbl worchestershire
  • 2 each onion -- chopped
  • 1/2 teaspoon pepper
  • 2 cloves garlic -- minced
  • 4 tablespoons brown sugar (molasses)
  • 1 1/2 teaspoons salt
  • 2 teaspoons chili powder
  • 1 bottle Shiner Bock
Directions Add beer (carefully!) to sauce, add all ingredients, simmer for 5 to 10
minutes. If the spirit so moves, add a bit of cornstarch or masa dissolved
in warm water to thicken.
