Soups and Stews - Herbed Tomato Basil

Description |
This is a spicier variety of tomato basil soup that uses fresh onions, tomotos, and garlic for the bulk of its flavor. |
Ingredients |
- 1 cup sliced onion
- 1/2 cup thinly sliced celery
- 2 tablespoons butter
- 2 cups chopped, peeled tomatoes or one 14 1/2-ounce can whole, peeled tomoatos, cut up
- 1 14oz can chicken broth
- 1 8oz can tomato sauce
- 1 tablespoon basil
- 1 teaspoon thyme
- 1/2 teaspoon white pepper (you can substitute black pepper)
- 1 or 2 cloves of garlic, depending on taste
- 1 teaspoon sugar

Directions |
Cut up tomato, onion, and celery. Mince the garlic clove(s). Place all into a pan with the sugar and butter. Saute for about 8 to 10 minutes. Add tomoates and cook another 8 to 10 minutes.
Add chicken broth, tomato sauce, basil, thyme, and pepper. Bring to boil and leave there at least 15 minutes.
You can then leave this as a chunky recipe and serve as is, or, you can let this cool and blend slightly. If you blend it, then return it to the sauce pan for another 5 minutes or so. |
