Dessert - Pecan Brittle

||This is a recipe that my family has been using for quite a while. When I was in band in high school, my parents had to come up with a way to get rid of the pecans that they bought for fund-raising and this is it.
This recipe comes out really great tasting and is fairly easy to cook, but be patient as this just takes a while.
- 2 cups sugar
- 1 cup corn syrup
- 1 cup water
- 2 cups raw pecans, broken into smaller pieces
- 3 tablespoons butter
- 2 teaspoons vanilla
- 1-2 teaspoons baking soda
- 1/4 teaspoon salt
||Add sugar, corn syrup, and water to a medium sauce pan. Heat under medium heat, stirring vigorously to soft ball (234-240 degrees).
Add pecans and salt. Continue heating until hard crack stage (300-310 degrees). Stir the entire time or else the brittle will burn.
Remove from heat. Add butter, vanilla, and baking soda. Use less baking soda to get a smoother brittle.
Pour onto a greased pan with sides. Let cool for about 30 minutes to an hour. Break into pieces and enjoy.
