Main Course - Shortcut Angel Hair Pasta w/ Chicken

This refined version is a bit faster and easier to make. For those of us who want a great, low-fat meal with little cooking. |
Ingredients |
- 2 tbsp olive oil
- 5 oz. canned chicken
- 1 cup carrot, sliced
- 10 ounces broccoli florets, thawed (fresh or frozen)
- 2 cloves garlic, minced
- 4-6 ounces angel hair pasta
- 7 oz. chicken broth
- 1 tsp dried basil
- 1/4 cup grated Parmesan cheese

Directions |
Step 1: Heat olive oil in medium skillet on medium heat. Add carrot, broccoli, and about half the chicken broth. Cover and simmer about 4 minutes until carrots and broccoli are tender, stirring periodically.
Step 2: Add chicken, garlic, basil, pasta (uncooked), and remaining broth. Mix and keep covered for about 10 minutes, or until pasta is cooked. Add Parmesan and seasoning to taste. |
