Salads and Dressings   -   Warm Spinach and Apple Salad with Bacon   by Iron Chef Six-Speed and Iron Chef Dogcow

Description This dish was served as the salad course at the Iron Chef competition our friend (and webhost) Rusty hosted. The dressing is pretty bold and flavorful, which contrasts nicely with the coolness of the apples and spinach.
Ingredients
  • 4 thick bacon slices
  • 1 small red onion, sliced
  • 2 T cider vinegar
  • 2 t Dijon mustard
  • 1 t sugar
  • Salt & Pepper
  • 1 10 oz bag fresh spinach, cleaned
  • 1 McIntosh apple, cored and thinly sliced
Directions Note: After preparing the dressing, it was a little aggressive for our taste. We added another teaspoon of sugar, and some olive oil to tone it down some.

In a skillet over medium heat, cook the bacon 'till crisp. Transfer the bacon to a plate lined with paper towel and drain. Pour off all but 2 tablespoons fat from the skillet.

Add onion to skillet, and cook for three minutes or until wilted. Add vinegar, mustard, sugar, salt, and pepper. Bring mixture to boil, stirring. Combine spinach and apple in a serving bowl. Just before serving, toss in the crumbled bacon and hot dressing.
Serves 4
