Dessert   -   Sopapillas   by Rusty Nejdl

Description This is a deep fried flat bread that is commonly served as a dessert with honey or cinnamon and sugar.
Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons shortening
  • 3/4 cup water
  • 2 cups of vegetable oil
Directions 1. In a large bowl, sift together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Using hands, mix in water to make a smooth dough. Knead lightly on a floured surface. Roll out the dough until it is about 1/8 inch think. Cut it into about 12 three inch squares.

2. Heat oil in deep-frier or large pot to 375 degrees F. (This is really hot) Sprinkle a drop of water into the oil to see if it sizzles. If it does, then the oil is hot enough.

3. Drop each square in the oil. The square should immediately begin to sizzle and fluff up. When it is puffed up, flip it over and cook until golden brown. Remove and place on a paper towel to remove some of the oil. Serve immediately.
