Breads   -   Banana Nut Bread   by Rusty Nejdl

Description This probably isn't the healthiest recipe but my family loves it and it stays moist.
Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter or margarine
  • 1 cup white sugar
  • 2 mashed up overripe bananas
  • 2 eggs, beaten
  • 1/2 cup chopped walnuts

Directions Preheat the oven to 325 degrees F. Grease and flour a 9x5 inch loaf pan.

Mix the flour, salt and baking soda into a large bowl. In a separate bowl, melt the butter and mix in the sugar until smooth. Stir in the bananas, eggs, and walnuts until well blended. Pour the wet ingredients into the dry mixture, and stir just until blended. Don't worry if you have some chunks of banana left. Put the batter into the bread pan.

Bake for about 55 minutes. Bread is done when you can insert a tooth pick and it comes out clean.
